Fresh hens (fowl) are cooked on the bone to perfection in a state of the art continuous cooker. The cooked chickens are then deboned by hand and undergo thorough inspection for bones and defects prior to being mechanically diced into 1/2" (12.7 mm) cubes. The cooked diced cubes are then individually quick frozen and carefully screened to remove small and oversized pieces ensuring consistent appearance and weights.  Reverse natural proportion blend is a mix of 65% dark meat and 35% white meat.

Hens (fowl) are recognized for their intense chicken flavor and firm texture making them ideal for soups, pies, salads, entrees and sandwiches. The firm texture lends itself to being reheated without the pieces becoming too soft or breaking down.
