Fresh broiler chicken breasts are deboned by hand. The breasts are sliced into small random pieces then herb-seasoned, steam-cooked and individually quick frozen. Hand cutting before cooking gives a very random homemade looking appearance. The average finished piece weight is approximately 5 g.
