RECIPE FOR THE MONTH OF JANUARY

CHICKEN BAKED MACARONI & CHEESE
 
THAT WILL WARM YOUR BODY AND SOUL!

INGREDIENTS:

2 cups Uncooked elbow macaroni
1 Chopped onion
1/4 cup Butter or margarine
1/4 cup All purpose flour
1/2 tsp Salt
1/4 tsp Pepper
2 cups Milk
2 cups Shredded old cheddar cheese
3 cups Thawed Reuven Cooked Diced or Shredded Chicken

PREPARATION:

  • Preheat oven (350oF).
  • Cook elbow macaroni as directed on package. 
  • While elbow macaroni is cooking, melt butter in 3-quart saucepan over low heat.
  • Brown onions in melted butter.
  • Stir in flour, salt and pepper.  Cook over medium low heat, stirring constantly, until mixture is smooth and bubblly; remove from heat.
  • Stir in milk.  Heat to boiling, stirring constantly
  • Stir in cheese and Reuven's Cooked Diced or Shredded Chicken. Cook, stirring occasionally, until cheese is melted.
  • Drain elbow macaroni.  Gently stir macaroni in cheese sauce.  Pour into an ungreased casserole dish.  Bake uncovered 25 to 30 minuties or until golden brown.
